Hello out there! Popping in so quick today. We have a wedding in my partner’s family and a couple Thanksgiving get togethers this weekend. The sun is shining as I throw this together and I plan on getting out there to enjoy it. Happy Thanksgiving to my fellow Canadians. I hope that you’re enjoying a few days of gathering and all the pie you can handle. Big hug and take care!

5 Things I’m Enjoying:
- Finally watching It’s Never Over this weekend
- Apple. Fritter. Focaccia?!?!
- Not a thing I can link to, but I’ve been adding lentils to my batches of brown rice in the rice cooker and it’s been great. Short grain brown rice takes about 90 minutes in my Zojirushi, which I cook in a mixture of stock and spices. At the halfway point, I just add cooked lentils and stir them in. Perfect for the base of a power bowl kinda situation!

5 Questions:
- We went apple picking and I need apple recipes!
See the seasonal recipes below for my selects! Also working on parsnip apple soup for you ;) - I know it’s hard to pick, but do you have a top 5 ranking of veggies?
I absolutely do. Fennel, cabbage, broccoli rabe, sweet potatoes, and cauliflower! - What are you doing with all of those honey nut squashes?
Making soup, cutting into cubes and roasting (to serve as a veg side or on a bowl/on tacos or pizza), turning into pasta sauce, risotto, nothing terribly complicated! - I have lots of end season tomatoes in my garden that are a green/not fully ripe. What can I do with them?
I highly recommend this roasted green tomato soup recipe from Sher Castellano’s blog! It’s simple (the veg just roasts on on a baking sheet), nourishing, and delicious. I am in the same predicament myself right now and am thinking of blending some up into a salad dressing of sorts with basil and garlic. I think it’s helpful to think of green tomatoes as an ingredient that adds acidity and brightness to whatever you’re cooking; rather than just lacklustre tomatoes, ya know? - Always enjoy your music recs! What are you listening to for relaxation lately?
Lately: Dianna Lopez (Meadow Spirit is particularly gorgeous) and Sven Wunder’s new one. And for always: Hailu Mergia, Brian Eno, Ryuichi Sakamoto and Alice Coltrane.

Hi Laura, I have a potential question for a future Saturday Sun. I notice that in a lot of your photos you are cooking in a large enamel dutch oven. How do you deal with foods sticking like crazy to the bottom when cooking? In your Italian Wedding Soup recipe, for example, you call for browning the meatballs, but when I try to do anything like this on enamel cookware, it sticks so badly. I feel like I’m using enough oil, but maybe I’m not. I’d like to get away from using nonstick cookware so much. Any tips?
Laura – Look forward to checking out all your 5 things in the Saturday Sun newsletter. I just added It’s Never Over to my watch list. Supposedly coming to HBO Max this winter for free. I know I can purchase on some of my other streaming services but always wait for one of them to offer at no cost. Thanks for your creativity, openness in sharing your life and being a constant force of support for me. xoxo Claudia
Hi Laura, Question for a future newsletter. How can you prevent basil from turning black in recipes? I tried making an herb oil recently and to my disappointment it turned from bright green to black after only a couple hours in the fridge.
OMG, talk about rabbit holes! You Made me read both the Bruce Springsteen and TJ’s article.
LOL Appreciate that you had both on your Mess today. Thank you and your doggers look so cute with their scarves!
Oh my gosh, I devoured every link in your “5 things I’m reading” section, and loved hearing about all the things you are enjoying. Plus, those apple recipes! Can’t wait! Thank you so much for a nice start to my Saturday. :-)
your puppies are very cute..are they a breed of dog.
They are mixed breed mutts! Cleo is a jack russell crossed with some type of hound and Mickie is a whippet chihuahua cross.
