Hello and happy 2025! It’s our first weekend catchup this year. Not gonna lie, it feels good to get a fresh start. I am grateful as ever to share more recipes and goodness with you this year. Food trends come and go (I’ve seen more than enough in/out lists the past week), but my love for vegetables remains constant. It’s a privilege to share that passion and experimentation with you week after week!
With goals and intentions for this year, I want to spend less time online FOR SURE. I do still lean on social media to promote new work and to connect with folks, but I know that the sometimes endless scroll and absorption of Instagram’s curated algorithm can be stifling creatively. And sure! At times it is inspiring as far as cooking, gardening, nature etc goes, but generally I find its presence in my life means that I’m actually doing less. I’m liking and commenting on Reels about gardens, saving posts about plants to add to my yard, but never actually doing anything with that information! And with the news that Meta wants to introduce AI “user” accounts… it’s all a bit much. My goal ultimately is to have a “post and close the app” routine, to find other ways to connect, and to spend more time in the garden of course 😌
As a reminder (if you follow along via Insta/another platform), I post all of my best stuff right here on the website! If you haven’t subscribed to my email list yet, I would be over the moon to have you. New subscribers receive my beautiful pantry and equipment guide as a bonus, and I only send 2 emails a week maximum–one with a new recipe and one with this weekend collection of reads and links. I love responding to your questions and comments here and via email as well. TAKE GOOD CARE out there and have a great weekend/start to 2025 🤍

5 Questions:
- Getting so bored with roasted veggies. What to do to switch up the flavors?
I definitely rotate my spice blends for roasted veg all the time! From za’atar, Montreal steak spice, baharat, dry harissa seasoning, so many store bought blends from NY Shuk and Kanel, and even some homemade blends! If folks want my go-to blend that I use on pretty much everything, let me know! Also a squeeze of lemon or drizzle of nice balsamic vinegar right out of the oven is always a nice touch with roasted vegetables. And don’t forget sauces! Some of my favorites: Vegan Green Goddess, Sweet Mustard Dressing, Spicy Tahini Ranch, and Creamy Peanut Sauce. - How do you set up you camera/phone to film from above/behind while cooking?
I use this tripod with the little bendy arm on top. I just set it up in front of my stove, slightly higher than my height. Set the iPhone camera to cinematic mode, make sure the focus is proper, and I’m good to go! - Which replacements for dairy really have it dialed in?
♥️ Butter: Miyoko’s or Nuts For Cheese
♥️ Milk: None of the vegan options taste like cow’s milk in my opinion–not even the Not Milk brand/other options designed to mimic it. For versatility, taste, and protein content, Silk soy milk is my go-to. If I’m making something where I really want to enjoy the milk specifically (like a latte), I prefer homemade nut milk or one of the fancier store bought nut milks like Three Trees, Elmhurst, or New Barn.
♥️ Cream Cheese: I know that there’s been a ton of innovations on this front, but I still prefer the original Tofutti Better-Than Cream Cheese product. It’s the best one for baking too.
♥️ Sour Cream: Forager Project’s is very good for baking, but I do prefer homemade for dolloping on chili, baked potatoes etc.
♥️ Cream for cooking: nutpods original or Califia Farms’ Better Half
♥️ Yogurt: Culina or Yoggu
♥️ Soft cheeses: Nuts For Cheese or VegNature
♥️ Feta: I used to love the Trader Joe’s one (RIP), but I tried Nafsika’s Garden recently and it’s pretty good!
♥️ Mozzarella: Miyoko’s is decent! Still not a huge fan of 99% of vegan melting cheeses available. - Would love to know your current skincare lineup!
🌝 Cleanser: Osea Ocean Milk
🌝 Hydrosol: Either Josh Rosebrook Hydrating Accelerator or Heritage Store’s Rosewater toner
🌝 Serum: Sahajan Pure Radiance + 2 drops Consonant’s Hydrextreme (the Consonant line no longer exists and I don’t know what I’m gonna do–this serum was a game changer for me 😕)
🌝 Moisturizer: Sahajan Nourish Creme Riche
🌝 Oil: Pai Rosehip Bioregenerate
🌝 Sunscreen: Elta MD SPF 40
🌝 Retinol (3x a week): Skinceuticals 0.5 Cream
🌝 Exfoliator (2x a week): The Ordinary Lactic Acid 10% + HA - Favorite winter smoothies?
Salted Caramel Apple, Spiced Orange Cranberry, Chocolate Sweet Potato (sounds wild, is soooo good!), Creamy Pear Vanilla Chip, Peanut Butter Mocha, and Beet Blood Orange Spice.

Ah yay thanks for another great Saturday sun! I feel you on the minimizing social media. May I suggest the Chrome/Brave browser extension called “News feed eradicator”. It’s so helpful for not getting sucked in while you’re using instagram (or linkedin, or whatever) for work. And if you do want to scroll, you can set a timer saying you want to spend 5 or 10 minutes or whatever and it’ll just magically eradicate the infinite scrolling feed when your time is up. It’s been great for me!
Hi Stacy! Thank you for this suggestion. I will look into this one. I do use the Freedom app to outright block Insta, Reddit etc and it has been working pretty well for me.

Hi Laura,
I’m neither a vegetarian nor a vegan, but do love vegetables and read your blog for inspiration most weeks, have been doing so for years now ! Every recipe I’ve cooked from your blog has turned out just right. My daughter who “hates” cauliflower (she’s a young adult :) had seconds of your latest velvety cauliflower mash !
I just wanted to thank you for your work and the inspiration it sparks in my french home.
Hi Alice!
I am so pleased that you’re enjoying the recipes–and I especially love the note about your daughter enjoying the cauliflower mash :) That’s what my work here is all about!

I feel like we are on the same wavelength right now… I just read Digital Minimalism by Cal Newport and in the middle of my Digital Ceasefire. Its been both nice to not have all the extra clutter in my brain but also boring at times just sitting with my own thoughts. All I know is I really need this digital detox.
I love these so much! Dairy substitute list is so helpul! Curious what types/ brands of plantbrands foam best for cappuccinos and lattes? Thanks and happy 2025 :)
I will answer this in next week’s edition of Saturday Sun! Thanks Hilary :)

The Taste of Things/Phantom Thread
Those animal links – the cat adoption and farm sanctuary posts – made my morning and made me teary. We’re so lucky to share our lives with animals.
We really are!! Such a blessing
I’d love your spice blend recipe!!
Seconded :)
+1 – would love this recipe!! After started adding baharat to roasted veggies after making your Thanksgiving Panzanella – YUM! Would love to know what you use on a regular basis.

My go-to super cinch flavor booster for roasted veg is salt, pepper and cinnamon.
I looove a little cinnamon with my roasted sweet potatoes! And a pinch of cayenne for that sweet-spicy vibe! ;)

Another great post! Would love it if you shared your go-to blend recipe that you use on pretty much everything you roast. That pet adoption story melted my heart, thanks so much for sharing that. We adopted brother and sister kittens just a few months ago, Maurice and Maude. They had been in a foster home and then spent almost a month at a Pet Valu, which is where we met them and then the next day adopted them. It has been an interesting journey and they bring us so much joy each and every day. Take care and be well. xo
Hi Melanie,
I posted the blend in today’s brand new recipe: https://thefirstmess.com/2025/01/08/spiced-chickpeas-and-rice-crispy-cabbage-mustard-dressing/
And congratulations on your new kitty friends! So sweet that you adopted siblings
Take care!

Laura, I think that oldschool is the new black :) Social media insanity makes me appreciate books, blogs and newsletters written by a human being more and more. In my mid 40s I’m looking for people, activities and things that will be sweet to my nervous system. I’ll definitely limit my instagram presence but will keep on reading your blog, emails and look forward to your new book that we talked about 5 years ago – you were so kind to reply to my email.
Have a happy and healthy 2025, girl. Lots of love.
I am with you! Consuming most of my media via newsletters, blogs, Substacks, and books these days and it’s been great. I’m also coincidentally sleeping a lot better haha. I’ve been imagining my work without social media a lot lately and it excites me!
Be well!

Thank you for the dairy replacement section! Very interesting to try new brands even if some won’t be available in my small town in Quebec.
For the life of me I can’t find Miyoko’s anywhere when I live, but everyone who tries it seems to like it!
There’s a new vegan orange cheesy sauce for Mac n cheese and other stuff and I stopped making my own since I tried it : the one from LeGrand. I love using it as a dip with corn chips or even fries.
Does Nature Sante deliver to your area? I order a few hard-to-find American brands from this Montreal business from time to time (including Miyoko’s!).

Ooooh i will look this up for sure!!! Thank you!
Love these Saturday Suns! What are your pups names?
The orange and white one is Mickie and the brindle one is Cleo!

Adorable!
