My Go-To Green Drink with Coconut Water

My vibrant green drink is slightly sweet with peaches and apple, zingy with ginger and lime, and loaded with chard, cucumber and parsley.

This vibrant green drink is slightly sweet from peaches and apple, with a zesty kick of ginger and lime. It’s packed with chard, cucumber, and parsley, then blended with coconut water for a refreshing drink that comes together in minutes!

This morning green drink recipe reminds me of a green juice in a lot of ways. It has that bright, sweet-sour, and fresh vibe, but it is much more satisfying since we’re simply blending all of the ingredients and drinking them right up from there. It is incredibly satisfying to knock out a bunch of your daily fruit and veg in one super tasty smoothie.

I prefer using coconut water as the liquid base for this blender green drink. It has a naturally sweet flavor that compliments all of the other wholesome ingredients. It also mellows the edge of stronger greens! I’ve noticed that the “green” flavor is much more pronounced when I use plain water. I also just adore coconut water in general and find it to be extra energizing in the morning hours.

Personally, I enjoy this one a bit more when the temperatures are higher. It’s more on the juicy and cooling side–especially if you use fresh mint as your herb! For heartier smoothies that work all year, I recommend checking out my roasted strawberry coconut shake or this peanut butter banana and orange smoothie.

My Go-To Green Drink with Coconut Water

Ingredients

  • 1 ¼ cups cold coconut water
  • 1 tablespoon lime juice
  • 1 ½ cups chopped greens, lightly packed (see notes)
  • ¼ cup flat leaf parsley, cilantro, basil or mint, or a combination (I like mint and parsley best)
  • ½ English cucumber, chopped
  • 1 small apple, cored and chopped
  • ½ cup frozen peaches or mango
  • 1-inch piece peeled ginger
  • ice (optional)

Equipment

Notes

  • I generally aim for milder greens here. I love kale, but it can be a touch strong in this particular application. Chard, spinach or romaine are preferable for my personal taste.

Instructions

  • In an upright blender, combine the coconut water, lime juice, greens, herbs, cucumber, apple, frozen peaches, ginger, and ice (if using). Blend mixture on high until completely smooth. The texture will be between a smoothie and a juice. Enjoy immediately.

    This was delicious! I was hoping to find a recipe for a green drink that would taste like the ones I’ve bought at juice bars, but that could be made with just a blender, and this was perfect! Thanks for another great recipe.

    I feel in love with his smoothie from the first time I tried it. I find myself craving it for a light snack or my meal after a heavy brunch.     My family went camping at this one spot every year since I was a baby (they still do!) and even though I’ve never been the wilderness type, I do love it. All the reading and cosiness and sunburn and mosquito bites and uncomfortable beds and why do I love it again?

      Thanks for your sweet comment. I have a high powered blender, so I never strain. There might be a tiny bit of “chew” involved if you’re doing this in a regular blender. See what it’s like. A strain might not be a bad idea!

    I love green smoothies! Your comment about the peaches / mangos is so important. I’ve found that adding just a few slices gives the smoothie a really creamy consistency, and makes it so sweet and delicious!

    Heck yes green drink! I resisted greens in drinks for a while (which I’m sure is something most people can say), but I got past it pretty quickly when J began running the cafe/juice/smoothie bar at the natural foods market in town. I have yet to try parsley in a drink though, and I don’t know how that’s possible. Needs to happen asap-like.
